烹制方法:

1.绢(juan)豆腐(fu)切成小丁(ding),入温水(shui)中浸泡(pao)2分钟(zhong)后捞出滤水(shui)备用;

2.美味牛肝菌用(yong)温水泡发15分钟后,切成细末;

3.锅中加少许食用油加热,入牛(niu)肝菌末煸炒至水(shui)分基本收干为止;

4.加入郫县豆(dou)(dou)瓣翻炒均匀,然(ran)后(hou)加入辣椒(jiao)粉、花椒(jiao)、蒜末(mo)、豆(dou)(dou)豉;

5.加入泡发牛(niu)肝菌的水,大(da)火煮开(kai);

6.往锅中滑入豆(dou)腐块(kuai),加少许盐、糖调味,改中火炖煮;

7.炖(dun)煮期间可轻轻晃动(dong)锅子使汤汁均(jun)匀(yun),忌用(yong)锅铲(chan)翻(fan)动(dong);

8.炖煮约三(san)分(fen)钟后(hou),分(fen)三(san)次加入水淀粉(fen),轻(qing)轻(qing)转(zhuan)动(dong)锅子让汤汁(zhi)和水淀粉(fen)混合均匀,待汤汁(zhi)浓(nong)稠(chou)后(hou)关火即可;

9.出锅,撒上葱花和花椒粉(fen)。
