烹制方法:

1.叉烧、鸡(ji)脯(fu)肉切(qie)片;牛蹄(ti)筋和美(mei)味牛肝菌均切(qie)小块(kuai);鸡(ji)蛋清打散(san);豆腐(fu)切(qie)薄(bo)片;葱蒜去(qu)皮拍烂;柿子椒、胡萝卜(bu)切(qie)片备用;

2.鱿(you)鱼、虾仁用焯水(shui),鱿(you)鱼切丁、虾仁去(qu)壳后挑去(qu)泥肠;烫熟生菜、胡(hu)萝(luo)卜(bu)放入砂煲内作(zuo)为垫底菜;

3.炒锅烧(shao)热油,爆香葱、姜、蒜,煎香豆腐片;再加入高汤(tang)及少(shao)许盐(yan),加酒20g,煮(zhu)2分(fen)钟(zhong);

4.再放入鸡(ji)脯(fu)肉、叉烧(shao)煮(zhu)(zhu)熟后倒入砂煲内的生菜上(shang);其余(yu)材料和姜、大葱、蒜(suan)放入砂煲大火煮(zhu)(zhu)至(zhi)汁浓汤稠(chou);再加少许水淀粉勾芡,淋入料酒(jiu)、生抽、川野菌滋、盐、胡椒(jiao)粉、香油即可。
